Eating your way through Pujo
Half the reason to be on the street at all. What to eat, where it turns up, and how not to spend Navami in bed.

The core list
Kathi roll — a paratha wrapped around kebab, egg, onion and lime, invented in this city and best eaten standing up. Phuchka — the Kolkata version of pani puri, with a tamarind water that is sharper and hotter than elsewhere, and the vendor will keep handing them to you until you say stop.
Ghugni, a dried-pea curry with chopped onion and a squeeze of lime. Chop — beetroot, vegetable, mutton — deep-fried and eaten with mustard. Telebhaja generally, which is the whole family of fried things that appear on every corner from four in the afternoon.
Then biryani, which in Kolkata comes with a potato and a boiled egg and is a subject people will argue about for an hour. And mishti to finish: rosogolla, sandesh, and during the season, whatever the shop has made specially.
Where it is
Everywhere there is a queue, there is a stall. The concentration of food around a major puja on Ashtami night is genuinely absurd, and the quality is usually good because the volume is enormous and nothing sits around.
That is also the practical rule: eat where it is busy and where you can see it being cooked. A fryer with a queue is a fryer with fresh oil.
Sensible precautions
Hot, fresh and cooked in front of you is fine. The thing to be careful about is water and ice — bottled water only, check the seal, and be cautious with anything served with ice or with raw salad if your stomach is not used to the city.
Phuchka water is the classic risk and also one of the best things in Kolkata. Judgement call; busy stalls, made fresh.
Carry something for an upset stomach anyway, and do not attempt the entire list in one evening. Pujo is five days long for a reason.
